4 Egg-cellent Easter co*cktail Recipes — The Fizzy Pheasant (1)

Easter is a time of indulgence, and not just on the food front. Of course, we too will eat our body weight in mini eggs and enjoy a hot cross bun or six, but we also love playing with co*cktail recipes at this time of year, too!

When we think of Easter we think two things, Chocolate and more chocolate, so our co*cktail recipes embrace the theme wholeheartedly, with the exception of one, which is inspired by the classic Simnel cake. If we are being technical here, then actually two of our recipes are shots, but we would sip them like a co*cktail, so we say they count.

If you’re having an Easter-themed celebration then these are really great as signature drinks or welcome drinks for your guests – they’ve all got wow factor visually and taste as good as they look!

So, without further ado, here are our four Easter co*cktail recipes:

1.Mini Egg Martini

This one gives a playful Easter spin to a classic, and the crushed mini eggs on the rim give a yummy crunch to it. This creamy co*cktail is a great Easter alternative for anyone who loves a baileys in the winter.

MINI EGG MARTINI co*ckTAIL RECIPE

Serves: 1

INGREDIENTS

25ml Baileys Chocolat Luxe

25ml Baileys Classic

50ml Vodka

Handful of ice

Handful of mini eggs, crushed with pestle and mortar

Honey

INSTRUCTIONS

  1. Brush the rim of a martini glass with honey, then dip it into the crushed mini eggs, coating the rim with the mini eggs.

  2. Pour all of the spirits and the ice into a co*cktail shaker and shake until the outside of the shaker feels really cold.

  3. Strain into your prepared glass and your Martini is ready to serve - voila!

2. Simnel Cake Sour

The non-chocolate recipe we mentioned, this one is absolutely delicious. In fact, I’d go as far as to say it was our favourite of the four! What this recipe lacks in chocolate, it makes up for in incredibly delicious, fruit cake flavour! This recipe has the most elements, but the effort is definitely worth it. Some people go to the hassle of making the spiced syrup for this, but we don’t like too much fuss, and so decided to try it using some mulling syrup we had in the cabinet instead, and oh my, it worked perfectly! Thanks to this stroke of luck we have managed to shorten this recipe somewhat, without any compromise on flavour.

SIMNEL SOUR co*ckTAIL RECIPE

Serves: 2 large portions, 4 small portions

INGREDIENTS

100ml Amaretto

25ml Brandy

100ml Sherry

50ml Mulling syrup

Juice of 1 lemon

Juice of 1 orange

Ice

Golden Marzipan, rolled into balls (large marble sized)

INSTRUCTIONS

  1. Ideally using a blow torch, singe the marzipan balls carefully, to give them a slightly toasted effect. If you don’t have a blow torch, you can do this on a baking sheet under the grill. However you do this bit, do it carefully. Once cold, skewer with a co*cktail stick.

  2. Fill your glasses with ice. This recipe will do 4 small glasses or 2 larger tumblers (we prefer doing this to serve two).

  3. Pour the Amaretto, brandy, sherry, mulling syrup, lemon and orange juice into a co*cktail shaker with a handful of ice. Shake until the outside of the shaker feels really cold.

  4. Strain into your glasses, laying the skewered marzipan balls across the rim of the glass (see picture) and serve.

3. Mudslide Egg-stravaganza

A classic mudslide, popped into a hollow Easter egg – a chocolate shot glass, what’s more indulgent than that? You will need something to stand your mudslide egg shots in, but they won’t hang around long before you drink/eat them anyway! We used Shot glasses for this, but egg cups would be even cuter. We also thought dusting these with some cocoa powder would add an extra chocolate kick.

Serves: 3

INGREDIENTS

30ml Vodka

30ml Baileys Classic

30ml Kahlua

30ml cream (we used double cream)

1ce

3 hollow Easter eggs (cream egg size -ish)

INSTRUCTIONS

  1. Take the top off of the chocolate eggs using a hot knife, then pop in the fridge to chill for a minute or two.

  2. Add the Vodka, Baileys, Kahlua, cream and ice to a blender and blitz until smooth.

  3. Get your chocolate eggs out of the fridge, fill with the blended drink, dust with cocoa powder and serve immediately.

4. Cream Egg Shot

A cream egg in a glass. These can be shot, but we thoroughly advise sipping to enjoy the full flavour 😊 You need to pour very carefully to get the layers right. If you’ve got the patience and a steady hand then these are a great party starter.

Serves: 1

INGREDIENTS

1/3 Advocaat

1/3 Baileys Chocolat Luxe

1/3 Double cream

INSTRUCTIONS

  1. First, carefully pour Advocaat into the shot glass up to 1/3 full.

  2. Next, using a spoon, layer the Baileys Chocolat Luxe on top of the Advocaat, filling the glass to 2/3 full. Do this by putting the spoon into the shot glass so it is just above the Advocaat, and slowly pour the baileys onto the spoon. it will then run from the spoon gently onto the Advocaat.

  3. Using the same technique with a clean spoon, layer the double cream on top of the baileys, until the glass is full.

  4. Serve! You can shot this, but to appreciate the full flavours we recommend sipping.
