This keto broccoli recipe is a super quick and easy low calorie, low carb side dish that is full of flavor. The broccoli florets are covered in a ginger & lemongrass butter that gives it a bright Asian flavors that will go with any keto main dish. You can make this delicious side dish in just 5-7 minutes in a microwave oven!

This is a very old post that I decided to redo because I was in the mood for broccoli and came upon this super easy keto broccoli recipe.

This whole keto side dish can be made in about 5-7 minutes in a microwave oven. It’s very healthy and flavorful and it’s a break from your classic keto broccoli and cheese recipe.

It’s just steamed broccoli covered in a garlicky, ginger & lemongrass butter but boy does it taste delicious! I ended up eating half of this recipe for a low carb, low calorie and healthy lunch.

Just 5 Simple Ingredients.

The ingredients I used in the keto broccoli side dish is: fresh broccoli, garlic, lemongrass paste, ginger paste and butter.

The first time I made this I used fresh ginger and if I had some on hand I would have used it. However lately I have been buying this pastes at Aldi and they are very inexpensive and convenient to use.

Tip If You Are Using Fresh Ginger.

I noticed the other day that Aldi has fresh ginger root quite often so if you are looking for fresh ginger check that out. However if you need it just for 1 recipe. check out this tip.

Store extra ginger root in the freezer. Just pull out when you are ready to use it. It will grate easily and last a long time.

Whenever a recipe calls for ginger you just pull it out of the freezer and use a microplane to grate it. It looks like shaved ice but it thaws almost instantly and it’s so easy to grate.

Let’s Make This Easy Keto Broccoli Recipe With Ginger & Lemongrass Butter!

  • First chop the fresh broccoli into florets and place in a microwave steamer if you have one. Or rinse and place in a large bowl and microwave for 3-4 minutes. The water from the rinsing will help steam it. Drain the excess water and place in a bowl.
  • Meanwhile add the butter to a small dish then add in crushed garlic, the lemongrass paste and the ginger paste. Microwave for 30 seconds or 1 minute until the butter has melted.
  • Mix the butter together then pour the sauce over the broccoli. Mix it up so all of the broccoli is covered in the flavored butter and then serve.
  • Variations – You can use this butter on just about any vegetable and it would taste good. However you can also change out the butter for coconut milk to get more of a Thai flavor.

This keto broccoli side dish was such a quick and easy recipe but so tasty. I love the combination of lemongrass, ginger and garlic and it went perfect with the broccoli.

Ingredients

  • 5 cups broccoli florets, fresh raw
  • 1 teaspoon lemongrass paste
  • 2 cloves garlic, crushed
  • 1 teaspoon grated ginger or ginger paste
  • 2 tablespoons butter

Instructions

      There is a picture of the tube….you can find it where the fresh herbs are in the grocery store. It’s the first time I’ve bought it but it’s pretty good.
